Chickenless Salad Recipe

Chickenless Salad

  • 2 15oz. cans chickpeas drained and rinsed

  • 1/4 cup vegan mayo

  • 2 tbsp dijon mustard

  • 1/4 cup diced red onion

  • 1/4 cup diced celery

  • 1/4 cup chopped parsley

  • Salt and pepper, to taste

Mash chickpeas in a large bowl with fisted hands or a potato masher until about 90% smashed. Add in remaining ingredients and season to taste.

For Curried Chickenless Salad: Add 1 tbsp curry powder, 1/4 cup chopped dates or raisins

For Napa Chickenless Salad: Add 1/2 cup sliced red grapes and 1/4 cup walnuts, almonds, or pecans

For Tuno Salad: Add 1 tsp kelp granules, 1/2 lemon juiced, 1 tsp dill

For Eggless Salad: Add 1 tsp turmeric, 1 tsp apple cider vinegar, 1/2 tsp black salt (found in Indian markets or online)
