Grain-Free Kimchi Pancake

Serves 4

This is a grain-free version of one of my favorite foods. These pancakes make a great appetizer or top them with a fried egg for an amazing breakfast.

1 cups almond flour
1 egg beaten
1/2 cup water
1 cup of chopped cabbage kimchi
¼ cup kimchi liquid
Oil or cooking spray for cooking

Mix all ingredients together and let sit for about 10 minutes. Heat a saute pan over medium heat and coat with a thin layer of oil or cooking spray. Use a large spoon to scoop out batter and add to a skillet. It doesn't need to be flat, you'll flatten it out after you flip it.

Cook for 3-4 minutes until set and golden brown on bottom. Turn over with help of spatula or plate (or flip it in the air if you are good at that) and finish by cooking 1-2 more minutes, adding more oil if necessary. Once the pancakes are crisp on both sides, eat them. Top with a fried egg, if you like.
