Goji Berry and Pistachio Truffles
Don't even be tempted to surprise your honey with big heart shaped box of drug store chocolates! Instead share your love with these tasty treats made with heart healthy goji berries and pistachios.
2/3 cup dried Medjool dates, pitted
2/3 cup goji berries
1 cup unsalted pistachios
1/3 cup cocoa powder, plus extra for dusting
1 tsp vanilla extract
dash of salt
Place the dried dates, cocoa powder, vanilla extract, salt and dried goji in a food processor and pulse until paste-like. Then add the pistachios and pulse until well blended. Leave some large pieces of pistachios if you like a more crunchy texture. Press mixture into heart shaped molds. You can also roll them into balls or use another type of mold.
Place in the freezer for at least an hour. When the mixture is frozen, remove the treats from the molds. Dust the treats with cocoa powder. Store in an airtight container in the freezer or refrigerator.
