Pretty in Pink Salad

Serves 4-6
I couldn't resist naming this salad after my favorite Molly Ringwald movie. Sillyness aside, the lycopene from the watermelon and Vitamin E from the hazelnuts make the perfect combination for healthy skin.

1 jicama, chopped
2 cups watermelon chopped
1⁄2 cup basil, chopped
1⁄4 cup toasted hazelnuts
3 green onions
1⁄4 cup olive oil
1 lemon juice
Salt and pepper to taste

Mix all ingredients and salt and pepper to taste. Serve chilled.
