Thai Steak Salad
Finally a salad dad can sink his teeth into and with grass-fed beef having the same omega-3 oil profile as salmon it protects his fertility too.
1 jicama, shredded
2 carrots, shredded
1-2 serrano chili minced
4 scallions, chopped
1 tbsp peanut oil
1 clove garlic, crushed
1 tbsp fish sauce
1 tbsp sugar
1 lime, juiced
1 lb grilled organic grass-fed lean sirloin, thinly sliced
2 tablespoons peanuts, toasted, chopped
4 cups cooked brown rice or other grain
To make the dressing, mix sugar, lime juice, fish sauce, peanut oil, chili and garlic together in a bowel. Add jicama, scallions and carrots to the dressing and mix well. To arrange separate rice on 4 plates or bowls, top with salad mixture, followed by steak and garnish with peanuts.
