Ume Beet Salad
The sweetness of beets blends well with the salty tanginess of umeboshi plums.
2 cups shredded raw beets
1/4 cup chopped scallions
1 tbsp roasted sesame seeds
1 tbsp grated ginger
1 tbsp umeboshi paste (available at health food or Asian markets)
2 tbsp sesame oil
1 tbsp rice vinegar salt and pepper to taste
Toss ingredients together and serve chilled.
